House-Brined Corned Beef Brisket Now Available for Order

Saint Patrick's Day is just around the corner and Butcher Dave has started brining grass-fed beef briskets for corned beef. St. Patty's is just another day without expertly brined corned beef. Check out the recipe section of our website for our preferred technique for cooking the brisket. 

All pre-ordered corned beef will be available for pick up March 14-16, 2015. Call the shop to place your order, (608) 709-1418. Corned beef brisket is $10 per pound

SloPig at The Madison Club

The Conscious Carnivore will be participating in SloPig on March 22 at The Madison Club. SloPig is a celebration of heritage pigs and the people who surround the movement. The event features a celebrity chef competition, craft punch competition, heritage pig product tasting, butchery demonstrations, artisan beer tasting, live Bluegrass bands, craft spirit tasting, wine tastings, local art installation, and much more. SloPig has been designed to bring you an overwhelming amount of heritage pork and local culinarly crafted items all at the same time under one roof! Madison Area Chefs Network's Chef Mashup

The Conscious Carnivore is a sponsor for the Madison Area Chefs Network's Potluck at Sardine on March  15. Twenty Madison-area chefs will be preparing and sharing small plates and craft cocktails with attendees. Tickets are $75 per person and proceeds go towards the Second Harvest food bank

Lent is in full swing and The Conscious Carnivore has you covered. Not only do we have great grass-fed meat, but are stocked with wild-caught Alaskan fish. Sockeye and King salmon, sablefish, cod and halibut, and during Lent on Fridays all fish is 5% off

Madison-based Bering Bounty travels to Alaska to catch the finest fish in the world, processes it in Alaska (unlike many companies that send fish to Asia for processing) and then sends it to us.  Stop in and get some fish and ask about great and tasty recipes.

Meet Your Meat -- The Katahdin Sheep

We have Katahdin lamb in the case today! Have you heard about this breed? The low-maintenance, easy care sheep were first bred in the 1950's with a goal for both fiber and meat production. Crossed with the English Suffolk and other breeds, they were named after Mt. Katahdin in Maine, and are very heat and cold tolerant, making them a great breed for living in Wisconsin. Our lambs are from Double Ewe Sheep Farm in Arena, Wi. The farm takes pride in providing natural wholesome products and mission is to produce the finest pasture-raised lamb and beef using care and conscience.

Welcome to The Conscious Carnivore

The Conscious Carnivore, in Madison, Wisconsin, is a butcher shop that provides expertise to help customers be more knowledgeable about what and how they eat. The store on University Avenue was the first retail outlet for Black Earth Meats (Black Earth, Wisconsin), the first humane certified, USDA processor in the area. With a growing demand of Madison-area consumers for grass fed beef and pastured pork, The Conscious Carnivore opened with a mission to educate the home cook.

At The Conscious Carnivore, customers find meat that is locally-sourced, healthy, and handled properly. From local animal harvesting and processing to on-site, high quality butchering and packaging, The Conscious Carnivore can ensure certified organic, grass fed, and healthy meats through its self-contained supply chain. All animals are sourced from Wisconsin and the Driftless area, and since the forced closing of the Black Earth facility, we work with local, state-inspected abattoirs to ensure our animals are slaughtered humanely.

Then there is the fish! While we can’t source local, wild-caught ocean salmon, we are working with a Madison-based fisherman who brings back his catch from Alaska. You will appreciate the quality, flavor, and care of Bering Bounty’s salmon, cod, crab and other specialty fish.

We encourage you to attend our various workshops, tastings, and classes on proper cooking and meat cutting techniques. Talk with our staff about antibiotics in animal agriculture (and why we are against them), heritage breeds, and local sourcing. Work through your recipes and menus with us — we are here to help! Pull up a chair, open a beer, and read through our library. Kids are welcome to color at our big kitchen table and we are always happy to connect with you.

We believe it is time to recapture the power of cooking, of connecting with family and friends over a home cooked meal. As we say, “Let’s slow down and eat good food!”
