How it works: Bulk order information and cutting instructions are available below. Call the shop or stop in with any questions! A $100 Deposit is taken when you submit your order. Our butchers will call and confirm receipt of your order. Bulk orders have a 2-4 week lead time, occasionally longer. Expect another call from us the week your order is ready to confirm that you are available to pick up that weekend. We pick up our animals on Thursdays. Your bulk order will be available anytime during normal business hours on Friday, Saturday, or Sunday. We will load your order into your vehicle for you.
How much freezer space does it require? Typically, a processed quarter of beef requires 4-5 cubic feet of freezer space. A processed half hog requires 3-4 cubic feet of freezer space. A processed lamb requires around 3 cubic feet of freezer space.
Can orders be further processed? Additional custom processing such as sausages, snack sticks, bacon, smoking, etc. are not available for bulk orders.
Does a quarter or half beef include everything? Bulk orders are not priced to include other parts of the animal such as heart, oxtail, hanger steak, liver etc.
We do not accept bulk orders November 15th through January 15th due to the holidays. Sorry!
beef quarters
We offer hindquarter and forequarters, each require a $100 deposit.
Beef hindquarters and forequarters cost $5.85 per pound of hanging weight. All bulk order animals are the same we use in our dry aging program and are the best we have to offer. We use a grass-fed Black Angus Hereford cross steer from our longtime favorite beef farmer, Ryan Martin, in New London, WI. There is typically 35-40% loss between hanging weight and the packaged take home weight. A typical hindquarter hanging weight from us is around 180- 210 pounds. Some of our animals may be larger or smaller and the actual cost per pound on the packaged weight will vary. We buy whole animals and pay for processing based on the hanging weight. The bulk orders we sell are priced the same way to help keep costs down. We believe that the overall value is well worth it. Below we calculated the cost per pound on the meat you take home.
Example:
200# hanging weight x $5.85 per pound = $1170.00 total cost to you. This is only an estimate.
A 35% loss would mean a 130# of packaged beef ($1170 ÷ 130# = $9.00 per pound)
A 40% loss would mean a 120# of packaged beef ($1170 ÷ 120# = $9.75 per pound)
All beef orders are fresh, vacuum sealed and ready for the freezer.

half berkshire hogs
Our bulk order hogs are sold in halves. Each half hog requires a $100 deposit.
All hogs are heritage breed Berkshire from Marigold Farm in Appleton, WI. Half hogs weigh approximately 80-90 pounds and are sold at a flat rate of $375. Half hog orders typically have a 2-4 week lead time, occasionally longer.
All half hog orders are fresh, vacuum sealed, and ready for the freezer.

Whole lamb
These are fresh Wisconsin lamb weighing approximately 40 pounds and sold at a flat rate of $500 each. There is a $100 deposit on all orders. Lead time on whole lamb is typically 2-4 weeks, occasionally longer. Whole lamb orders include all the traditional cuts in addition to neck roast, heart, and liver.
